Butter, bone broth, real fat and slow-cooked meat fed humans for 100,000 years. Then they told us to swap it all for seed oils and cereal — and obesity tripled. This 264-page manual shows you how to cook the old way again, starting with tonight's dinner.

The story they don't teach you

How The Most Trusted Advice In America Was Bought And Paid For

If you've ever tried to "eat healthy" and ended up heavier, more tired and more confused than when you started, I want you to hear this first:

It was never your discipline. You did exactly what you were told.

The problem is who was doing the telling. Here's how it happened.

1948

The heart charity gets a cheque from Crisco

Procter & Gamble — the company that made Crisco, a shortening made from cottonseed oil — handed the American Heart Association $1.7 million from a radio fundraiser. Overnight, a tiny group of doctors became a national institution. Within a few years it was telling Americans to replace animal fats with vegetable oils.

1967

The sugar industry pays Harvard to blame fat

The Sugar Research Foundation quietly paid three Harvard scientists to write a review in one of the world's most respected medical journals. It played down sugar and pointed the finger at dietary fat. Nobody disclosed the funding. It only came out in 2016, when researchers found the internal documents.

1977

The government makes it official

The first Dietary Guidelines for Americans told the whole country four things:

01

Cut fat, especially animal fat

02

Eat more carbohydrates — bread, pasta, cereal

03

Replace butter and lard with vegetable oils

04

Avoid cholesterol, so go easy on eggs

Every one of those instructions moved people away from food humans had eaten for as long as there have been humans — and toward food that didn't exist before the twentieth century.

And people listened. They switched to margarine. They bought the low-fat yoghurt. They put the eggs back and poured the cereal.

Here's what happened next:

Adult obesity, USA
13%→42%
Early 1960s vs. today
Diabetes, USA
<1%→1 in 10
Late 1950s vs. today

They followed the instructions. And they got sicker.

Now ask the question nobody on the evening news asks: who got paid?

The food companies that sold the replacements got paid. The cereal, the margarine, the seed oils, the "heart healthy" low-fat everything.

And then Big Pharma got paid — for the blood-pressure pills, the statins, the diabetes drugs and the weight-loss injections that came after. Not once. Every month, for life.

Nobody in that chain gets paid when you make a pot of bone broth in your own kitchen.

That's why no one is going to teach you how. So we will.

The question everyone asks

"Okay. I Believe You. But What Do I Actually Cook Tonight?"

Once you see the history, you can't un-see it. You start reading labels. You notice soybean oil in everything. You stop trusting the little red heart on the cereal box.

And then it's 6pm, you're standing in your kitchen, and you have no idea what to put in the pan.

Knowing the guidelines are wrong doesn't feed anybody.

You can read every exposé ever written about seed oils and still cook dinner exactly the way you did last week. Because what you're missing isn't information.

It's a manual.

Why a list of "good foods" fails

A List Of Foods Won't Save You. Technique Will.

The obvious answer is a list. Eat these, avoid those. Pin it to the fridge, done.

It doesn't work. Not for anyone who's tried it.

A list tells you

  • Tallow is better than canola

A manual tells you

  • What temperature tallow smokes at
  • Where to buy it without paying for a pretty label
  • How to render it yourself from a cut your butcher almost throws away
  • What to order when everything on the menu was cooked in soybean oil

That's not knowledge. That's technique. And technique used to be passed down.

Mother to daughter, grandmother to grandson, for thousands of years. Then two generations grew up on packaged food, and the chain broke. We're the first humans in history who have to learn to cook real food from a book instead of from a kitchen.

So we built the book. Not another manifesto — there are enough of those. A manual. The one that would have been handed to you if the chain hadn't broken.

It took the better part of a year. It runs 264 pages across 10 parts. And it assumes you know nothing, because most of us were never taught.

Why so cheap?

Straight answer: because we'd rather have ten thousand people cooking this way than four hundred people who paid full price. If the Bible is the first thing you ever buy from us and you never buy another, that's a fine outcome for both of us.

Questions

Before You Decide

"I can't cook."

Then you're the person this was written for. Part 1 starts with what equipment to own. Part 9 is one-pot meals, which means one pan and one heat source. The 14-Day Reset asks you to change one thing a day. If you can boil water and read, you can do this.

"Is this just another keto or carnivore diet?"

No. It's not a diet at all — there's no macro target, no phase, no list of forbidden foods beyond industrial ones. It's how to cook real food. Plenty of what's in here is vegetables, fermented things and seafood.

"I don't have time."

Part 2 is make-ahead breakfasts. Part 9 is meal prep for a real week. Most of the one-pot meals are under 30 minutes of hands-on work. The time problem is usually a decisions problem, which is what the Reset and the grocery guide solve.

"This sounds expensive."

We planned a whole bonus around this one. Cheap cuts cook better in these methods than expensive ones — Part 4 is largely about that. You render your own fat for pennies in Part 8. Broth is made from bones you were throwing away. Most people spend less, not more.

"My family won't eat this."

Bonus 7 exists for exactly this. The short version: change one meal, not all of them, start with the one they already like, and don't announce it.

"What format is it, and do I get it straight away?"

PDF, readable on a phone, tablet, laptop or printed. It lands in your inbox within two minutes of ordering. Nothing ships, and there's no app to download.

"Is there a subscription?"

No. One payment of $29.99, and you own it. You'll also get our newsletter, and you can unsubscribe whenever you like.

Your move

Two Kinds Of People Reach The Bottom Of This Page

The first kind

Closes the tab, and tomorrow night stands in the kitchen at six o'clock with the same question as yesterday. Keeps buying what the box says is healthy. Next year looks like last year.

The second kind

Spends $29.99, and by Sunday has cleared the pantry, made a broth that gels, and cooked a shoulder cut that cost almost nothing and tasted like a restaurant.

The difference between them isn't knowledge. You've read this far — you already know the guidelines were wrong. The difference is one of them has the manual and the other is still improvising.
